Does anyone still watch Grey’s Anatomy besides me? It’s painful, I know. But my best friend and I have spent 10 years watching it… so some Thursdays we get together to cook dinner and cringe through it. This last episode was… what even happened? The salad however, was memorable. To quote my friend, “I could lap up the rest of this dressing straight from the bowl.”
1/4 white onion – sliced
1 whole carrot – shredded
3 large Roma tomatoes, chopped into large pieces
1 large cucumber – sliced down the middle, then chopped
1/4 cup salted creamy peanut butter
2 tbsp. seasoned rice vinegar
2 tbsp. fresh lime juice
3 tbsp. vegetable oil
1 tbsp. soy sauce
2 tbsp. honey
1 garlic clove
2 tsp. fresh ginger – crushed
Dash of cayenne
1) Prepare all of your veggies and toss in a serving bowl together.
2) Mix together all of the dressing ingredients and whisk together until smooth. I didn’t use every bit of this dressing for the amount of salad I made – so you might have a little leftover and can lap it up!
3) Taste dressing and adjust any ingredients to taste, then toss with salad and serve.
