Peri Peri Chicken Skewers


2 lbs chicken breasts, cut into 1½-inch chunks 
½ cup white vinegar
Juice of 2 large lemons
3/4 cup olive oil
3 cloves of garlic, crushed
1 shallot, diced
2 tsps cayenne pepper
2 teaspoons paprika
1 teaspoon oregano
2 tsps chili powder
1 ½ tsp kosher salt
fresh black pepper to taste

1) Combine vinegar, lemon juice, cayenne, kosher salt, garlic, shallot, paprika, oregano, chili powder and peper in a bowl. Pour into a ziploc bag. Cut up chicken, add to bag, and marinate for at least 30 minutes or up to overnight.
2) Remove chicken from marinade and skewer onto metal skewers or bamboo sticks that have been soaked in water for at least 5 minutes.
3) Heat grill to medium heat.
4) Grill kebabs until golden brown and cooked through – about 8 to 10 minutes turning regularly.
