Garam Masala Spiced Vegetable Skewers with Mint and Cucumber Raita


So I forgot to take a picture of the raita sauce because I was so excited to eat these… But definitely make the raita sauce! If you have adventurous dinner guests, amp up the spice with more garam masala or some cayenne pepper. The coolness of the raita yogurt sauce helps cut the bite.


1 orange pepper, chopped into large pieces
1 green pepper, chopped into large pieces
1 large zucchini, sliced and then cut into moons
1/2 large white onion, chopped into large pieces
1 carton cherry tomatoes, whole
1/2 cup canola
1 tsp garlic powder
1 tbsp garam masala
bamboo skewers (soaked in water for 30 min) – makes about 8 skewers

2 cups plain yogurt
1 cucumber, finely diced
1 cup fresh mint, chopped
1 tsp cumin
1 tbsp garam masala
salt and pepper to taste

1) Toss skewer vegetables with canola oil, garlic powder, and garam masala in a large ziplock bag and marinate for 30 minutes.
2) Meanwhile, make the raita. Combine yogurt, cucumber, mint, cumin, garam masala and salt and pepper. Stir together until smooth and refrigerate until you’re ready to eat.
3) Once vegetables are done marinating (you can marinate for a lot longer if you want), thread them onto the skewers.
4) Heat grill to medium-high heat.
5) Grill vegetables, basting with any leftover marinade, for about 8-10 minutes until they have nice char marks.
6) Serve with raiti sauce. You will have lots of raita – pour it over your rice or main dish too if it fits!
