Thai Side Salad with Peanut Dressing


Does anyone still watch Grey’s Anatomy besides me? It’s painful, I know. But my best friend and I have spent 10 years watching it… so some Thursdays we get together to cook dinner and cringe through it. This last episode was… what even happened? The salad however, was memorable. To quote my friend, “I could lap up the rest of this dressing straight from the bowl.”

1/4 white onion – sliced
1 whole carrot – shredded
3 large Roma tomatoes, chopped into large pieces
1 large cucumber – sliced down the middle, then chopped

1/4 cup salted creamy peanut butter
2 tbsp. seasoned rice vinegar
2 tbsp. fresh lime juice
3 tbsp. vegetable oil
1 tbsp. soy sauce
2 tbsp. honey
1 garlic clove
2 tsp. fresh ginger – crushed
Dash of cayenne

1) Prepare all of your veggies and toss in a serving bowl together.
2) Mix together all of the dressing ingredients and whisk together until smooth. I didn’t use every bit of this dressing for the amount of salad I made – so you might have a little leftover and can lap it up!
3) Taste dressing and adjust any ingredients to taste, then toss with salad and serve.


Beefsteak Tomato Salad


I’ve been trying to find new veggie side recipes that aren’t… a typical leaf salad. Adapted from Martha Stewart, here’s a flavorful, simple tomato salad. This would be great as a side for pasta, steak, or even by itself. I followed Martha’s suggestion of making and serving immediately. But if you have time – I would make this an hour or two ahead of time and let it marinate. (This made about two good sized servings – I’d suggest about a tomato per person).


2 tbsp red wine vinegar
2 tbsp grapeseed oil
half shallot – finely chopped
2 tsp capers – roughly chopped
2 beefsteak tomatoes
salt and pepper

1) Whisk together vinegar and oil. Add in shallot and capers.
2) Core and de-seed tomatoes, and slice thickly. Toss with dressing and season to taste with salt and pepper. If you have time, let marinate in the fridge for an hour or two.

Craisin Apple Salad
















Here’s the recipe for the side salad we did last night!

White Onion
Blush Wine Vinaigrette (I like Brianna’s)

(Add however much of the above ingredients that floats your boat.)

1) Add spinach to a large serving bowl.
2) Add chopped white onion, craisins, chopped apple, walnuts, and feta to bowl.
3) Toss in vinaigrette and serve immediately.
